Cuban Croquettes Recipe
These Cuban Croquettes are delicious finger foods served at parties or as an appetizer. Traditionally these Cuban Croquettes are fried you can experiment with the oven and might need to spray some oil on them if you want to try to bake them. The Cuba croquettes are served with crackers or as finger food at parties.
Perfect for a Havana theme party or tapas party. In Miami you will find them at every Cuban restaurant and many times are served as a sandwich called “croqueta preparada” prepared croquette sandwich which is basically ham, Swiss cheese and two croquettes lightly pressed on a Cuban bread.
The following recipe is made with ham but it can easily be made with chicken or fish. Just substitute the ham with cooked chicken or fish.
4 tablespoons butter
1/2 cup onion finely chopped onion
3/4 cup flour
1 cup of milk
4 cups ground ham
1 tablespoon finely chopped Parsley (optional)
1/4 teaspoon nutmeg
2 tablespoon dry sherry wine
1/2 teaspoon salt (more or less to taste)
1/4 teaspoon black pepper (more or less to taste)
½ cup of Dry bread crumbs if need it
2 eggs beaten
Dry bread crumbs (mixed with 1/4 cup flour)
Vegetable oil (for frying)
In a large pan, melt the butter, add the onions, and sauté onions until soft and translucent. Blend the 1 cup of milk with ¾ cup of flour in a blender then pour this mix into the pan with the onions to make a béchamel sauce, continue cooking until the sauce thickens, the sauce needs to have the consistency of wall paper paste.
Add the grated nutmeg and sherry wine to the mix. Slowly mix in the ham and let it heat thru for about 3 minutes. Taste the mix and add salt or pepper if need it. Pour the mix in a container and refrigerate for two hours.
The cold mix needs to be firm and moldable if this is not the case you can add some bread crumbs to the mix. Mold the Cuban Croquettes like little logs about 2 -3 inches long. Prepare the egg wash with the 2 beaten eggs. Dip the croquets into the egg wash then roll them into the breadcrumbs and flour mix. Place the breaded croquets in a container and put them in the freezer for about 2 hours.
Fry the Cuban Croquettes in a 350F hot vegetable oil until golden brown.
Enjoy them with crackers!
