Cuban Ropa Vieja
Ropa Vieja literally means old clothes, this is the name of this delicious recipe. This Cuban ropa vieja recipe is very easy to follow, I like to add boil the meat first with lots of water and later use this cooking liquid for cooking beans and soups as a meat stock.
2 pounds beef flank steak
2 – 3 Cups of water
2 table spoons of oil
1/3 cup of oil
1 onion sliced
1 (8 ounce) can tomato sauce
1 green bell pepper, seeded and sliced into strips
1 green Red pepper, seeded and sliced into strips
2 cloves garlic, chopped
1 teaspoon ground cumin
1/4 teaspoon black pepper
1 teaspoon chopped fresh cilantro
2 bay leaf
½ cup of red wine
Simmer the meat for 1 – 2 hours in two cups of water adding a whole onion and one bay leaf, the meat should shred really easy with a fork after is cooked. Meantime heat two table spoons of oil add the sliced onions, bell peppers and sauté for 3 minutes then add the rest of the ingredients and cook the sauce for 5 more minutes at low heat. Put the shredded meat in the sauce and cover adding some of the meat cooking liquid stock if is too dry, simmer for 10 more minutes. Serve over white rice.
Tip: This recipe can be made in a slow cooker just put all ingredients in a slow cooker adding one cup of water and let it cook for 6-8 hours. Shred the meat and serve.
